Avocado Smashin' with Spirulina

You may have seen the word Spirulina floating around the Internet, or on the shelf of your neighborhood organic store; and you probably wondered what it is and what to do with it.

Spirulina is a natural “algae” powder that is high in protein and a good source of antioxidants, and B-vitamins. According to the FDA, Spirulina contains significant amounts of calcium, niacin, potassium, magnesium and iron. It also has essential amino acids and protein that makes up about 60 to 70 percent of Spirulina's dry weight.

The Anzacs in Mexico consumed this classified superfood in the 1960s, and it has recently come under the radar thanks to NASA’s discovery of its growth in space. It’s far from alien like, and it may be the single most nutrient-dense food on earth.

Whether you’re vegan or not, there are tons of ways to reap the benefits Spirulina in your diet. You can add it in a smoothie, salad dressing, in a meal, snacks, energy bites and more – get creative with this power powder and sprinkle it everywhere!

Ingredients 2 ripe avocados 1 tablespoon Spirulina Sprinkle of salt & pepper Juice from a half of lemon

Handful of pomegranate seeds 80g creamy crumbled feta (or any vegan cheese) 2 slices toasted rye

Method Mash the avocado with a fork combined with spirulina, sprinkle salt and pepper and squeeze lemon juice in the mash – and mix together.

Smear avo mash on toasted rye.

Top mash with crumbled feta and pomegranate seeds.Voila!
